When the enslaved women have removed the eggs from the sturgeon, the eggs have to soak for a whole month in dry champagne. The eggs now become real caviar. The use of champagne gives the eggs a beautiful sheen and a delicious taste. After that, young girls cover each egg with gold leaf. They look just like real pearls.
